I used to bake all the time in Michigan; however, when I moved to Colorado, most of my recipes did not work. I had to go back to the drawing board to create and deliver delicious recipes. To this day, when I go back home to Michigan, my high-altitude recipes work just as fine in low altitude or no altitude. Well, one of the recipes I was working on was the classic chocolate chip cookie. My kids love chocolate chip cookies, so developing the best chocolate chip cookie recipe at high altitude was a must.

Ok, news flash, I just started eating chocolate chip cookies a few years ago. Well, and chocolate. I must admit, I was not a chocolate lover. I guess as I got older, I started to appreciate chocolate a little more, well, in desserts anyway. Believe it or not, my favorite dessert is the chocolate molten lava cake from Chili’s. That’s another story for another day. I digress. However, now that I am a little older, my taste buds are changing, and I wanted to venture out and try new things. That includes chocolate and peanut butter. So, this chocolate chip cookie I developed is a perfect balance of cookie dough and chocolate chips. Now all chocolate chip cookie recipes aren’t equal, but this recipe I believe, will stand above all the others.

Why would you use this high-altitude recipe as opposed to a normal recipe? Well, believe it or not when cooking at high altitude food tends to cook faster and therefore become dry in the process. I mean, most recipes are palatable, but, why settle for a palatable cookie when you can have an awesome chocolate chip cookie? I tried many chocolate chip cookie recipes; I wanted a balance between a chewy cookie on the inside and a nice crust on the outside. Well, long behold, after several recipe attempts. I found the perfect chocolate chip cookie for you to try with your family and friends.

Who will make this cookie, well, if you live in a high-altitude environment over 3500? Although, you may be able to pull this cookie off at sea level. If you want to make at least 2 dozen of cookies without doubling the recipe. Someone who wants a versatile chocolate chip cookie that’s easy to make with a few ingredients and everyone will love. You will want to make this recipe if you are looking for a fail-proof delicious cookie recipe. This recipe is not for someone looking for a stiff, crunchy cookie.

This classic chocolate chip cookie will be perfect for any occasion. Actually, I’ve baked so many cakes in the past my children actually prefer cookies for their birthdays and special occasions. I would recommend this cookie for any holiday, birthday, bake sale, church event, take to work to share, girls’ night out, or anything else I can think of. Most importantly, this cookie uses all premium ingredients; remember when baking, the better the ingredients, the better the cookie will be.

Ingredients

The basic ingredients you will need for this fabulous chewy cookie recipe will be

Fresh brown sugar (not stale hard brown sugar)

White sugar

Vanilla extract

Baking soda

Salt

Oil

Eggs

Bittersweet (or semi-sweet) chocolate chips

Recipe

Before you begin this recipe, ensure all your ingredients are at room temperature. This a very important step.

Set your oven to 350 degrees, and get your cookie sheet out. I often use parchment sheets, but if you do not have any, that’s ok. Just use some nonstick baking spray.

Next, you want to combine your dry ingredients, the baking soda, flour, salt (Do not add the sugar) and set aside.

In a large bowl, melt your butter. In the large bowl, go ahead and add your brown sugar, then the white sugar. Mix with your fork. Next, you will want to add your room-temperature eggs, oil and extract.

Now, add your flour mixture to the wet ingredients and mix well. Make sure you do not over-mix. Once all ingredients are mixed well, add the chocolate chips, as many or as little as you like. About 1 to ½ cups will do.

Let the dough rest for about 15 – 30 minutes in the refrigerator. Next, add the cookie dough of your preferred size to the cookie sheet.

Delicious Chocolate Chip Cookies

Bake for 12-15 minutes, depending on your oven. A shorter cook time will give you a softer cookie. Cooking the cookie for a longer time will give you, well, less of a chewy cookie. It will be crunchier.

The Best Chocolate Chip Cookie Recipe High Altitude Instructions

  1. -Before you get started mixing ingredients, make sure all your ingredients are at room temperature.
    -Turn the oven on to 350, prepare your cookie sheet, and set aside
    -In A large bowl, melt the butter for 30 seconds at a time, and add the oil, vanilla extract, and eggs.
    -Add to the wet mixture the sugar, then add the flour, baking soda, and salt. Mix for about 10-20 seconds
    -Next, fold in the chocolate chips
    -Bake cookies on a cookie sheet for 12-15 minutes. The shorter the bake, the softer the cookie. If you want a crunchier cookie, you will need to bake it for the full 15 minutes or longer. I usually take my cookies out in 12 minutes.
    -The cookies will look slightly undercooked, but the cookies will continue cooking for a while once out of the oven.
