Easy Lemon Biscuit Cookie Recipe

Why are they almost like Ted Lasso biscuits? Well, they have lots of lemon flavor and are a bit chewy. I wasn’t looking for a crisp biscuit, but I wanted something light and in between chewy and crispy. Does that make sense? I know unconventional, but that’s why I like to bake, I can always take a concept of a dessert, I partly like and make it my own. Hence Easy Lemon Biscuit Cookie Recipe was born.

Nevertheless, if you are looking for a true shortbread biscuit, this recipe isn’t for you. If you are looking for something different with a burst of lemon flavor, well, I suggest you try these amazing shortbread biscuits. Let me tell you why I really like making these shortbread recipes in one word. EASY. Yes EASY. All you need are a few ingredients, butter, the best available. Flour, sugar (maybe cornstarch and extract. To break it dow, my version adds a little vegetable oil, but a little oil never hurts anybody. In this case, it keeps the biscuit moist (but a little dense).

To make this Easy lemon biscuit cookie recipe:

You will need

Butter (the best you can afford)

Flour

Cornstarch

Salt

Lemon juice plus lemon zest

Vanilla Extract

Sugar

Vegetable oil

I think the most important factor in this recipe is to make sure all ingredients are at room temperature and mixing of the butter and sugar. I did chill this batter in the pan for a few hours before baking it. It kind of molds/ blend all the ingredients together.

Now the first thing I want you to do is make sure you have the right size pan; I used a 9 x9 aluminum foil pan from the store and lined it with parchment paper.

Now in a large bowl, you want to mix your room temperature butter, then add your sugar mix for about 1 minute; you want your sugar and sugar mix to appear fluffy. Third, add the extracts.

The fourth step, In a separate bowl, you should have already mixed together your flour, salt, and cornstarch.  

Now add the flour mixture to your butter mix, and be sure not to over-mix. Mix for about 20 seconds. Lastly, add your lemon zest. Pour the mix into your pan and press firmly in the pan. Put the pan in the fridge for about 1 – 2 hours.

Finally, remove from the refrigerator and bake in the oven at 325 for 35 minutes.

Let the biscuits cool completely before cutting them. The parchment paper on the bottom makes it much easier to cut and serve.

Easy Lemon Biscuit Cookie Recipe Instructions

  1. Make sure you start with all room-temperature ingredients
  2. Before you start mixing ingredients, squeeze your lemon juice, set aside, next zest your lemon and set aside.
  3. Make sure you have prepared your 9 x9 pan with butter spray and parchment paper
  4. In a large bowl, start with you’re your butter and mix on low speed for about 10 seconds
  5. Add the oil, butter, and extracts/ flavoring (Vanilla extract and Lemon juice)
  6. Add the remainder of your dry ingredients and mix, it will look somewhat like a cookie batter.
  7. Next, fold in the lemon zest; this is my favorite part
  8. Immediately add the batter to the pan and press down firmly. You can use another piece of parchment paper to smooth it over.
  9. Now you want to put the pan and batter in the refrigerator for 1 -2 hours.
  10. After 1 -2 hours, place in your preheated oven and cook for 30-35 minutes on 325.
