I’ve been eating sweet potato pies, cookies, cupcakes and ice cream ever since I was a little girl. So, I decided to try a recipe to share with you all. I must warn you. It is very rich and full of cinnamon flavor. Most people eat sweet potatoes in the fall, but you can make this recipe year round.
I tend to use cake boxes some times (with the exception of holidays everything is made from scratch) because it’s easier to alter and the recipe still produces chewy and favorable results. Remember, nothing is free. You will need quite a few ingredients, but it will be worth it.

Now before you get started mixing ingredients you will need to bake (keep the skin on) or boil your sweet potato (remove the potato skin) until done and make sure the potato is cooled.
Also, make sure you have all the ingredients you need and you have set the oven to 350 degrees. Decide now, if you will make 2 round cakes or 24 cupcakes and prepare the cupcake pans or grease the round cake pans.

Now in a medium bowl, go ahead and mash 1 sweet potato in the bowl. You will also add the seasonings (cinnamon and nutmeg and butter).
Cut your other cooled sweet potato in cubes sprinkle with nutmeg, cinnamon and brown sugar (so the chucks won’t sink to the bottom when cooked) and set aside. (you will only need 1/2 of this potato).
In a large bowl, go ahead and mix all your cake ingredients. I do not sift but you can add your cake mix first and mash out as many lumps as you can before adding other ingredients.
Next, fold in the sweet potato mash.

Lastly, fold in the cut up sweet potatoes and add to the pan. Bake for 20-25 minutes or until done. Now while your mix is in the oven you can make your butter cream cheese icing. Or you can buy a tub of cream cheese icing. It’s up to you.

Instructions
- Set your oven to 350
 - Bake your sweet potatoes first and let them cool
 - Once potatoes are cooled, make your Sweet Potato Mash – set aside
 - Next, cube cut your sweet potatoes, set aside
 - Mix your cake mix with ingredients above
 - Add the Sweet potato mash to the cake mix, then add in the cubed sweet potatoes (optional)
 - Put in the oven, bake on 350, 20-25 minutes or until done.
 - Mix the softened butter with mixer
 - Add the softened cream cheese to the softened butter, mix well
 - Add the Vanilla Extract
 - Mix 1 cup of powered sugar at a time
 - Set aside (put in the fridge until cake is done)
 - Ice your cupcakes or cake, sprinkle with cinnamon
