First let me say this, my Kids love Crumbl cookies, I mean I was in line for about 20 minutes to get 6 cookies which costed me about $30.00 bucks. Some of them prefer cookie over cake. I guess because I baked cakes for most of their life. They could be caked-out. I wasn’t a huge fan only because I find the cookies super sweet. But they built a fantastic brand so, shout out to them. My daughter birthday is approaching, and she loves my funfetti cake. However, for those that do not eat cake, I decided to make some crumbl inspired funfetti cookies to go with the cake. This is the best funfetti chewy cookie recipe of all time! You will be able to use it to serve a CROWD.
This is an easy from scratch recipe. These cookies are firm and chewy at the same time and the icing is light and fluffy. These cookies can be huge (like crumbl cookies) or a little smaller to feed a larger crowd. You can make them ahead of time and store in the fridge and serve when ready. That’s what I did anyway.
Best Funfetti Chewy Sugar Cookie
I really enjoyed making these cookies and they turned out better than I expected.
Because this is a thick cookie the ingredients are a little unconventional, I wanted the cookie to be thick but still soft after refrigeration, in case of leftovers.
This recipe calls for flour, sugar, eggs, vanilla extract, salt, baking soda, butter, vegetable oil, milk, instant pudding and sprinkles.
In this Sugar Cookie recipe, first you will melt your butter, then add the vegetable oil to the melted butter.
Next add your eggs, milk and vanilla extract
Next add your flour, sugar, baking soda, salt and instant pudding. Now add your sprinkles.
Use your mixture to mix the ingredients together.
The mixture will be slightly lumpy. Take your hands and finish mixing the ingredients together. As in the picture below.
If you haven’t already, set your oven to 325.
Prepare your baking sheet. Again, I use the pre-cut parchment sheet paper.
Once your baking sheet is ready. For super huge cookies, take about ¼ cup of cookie mixture and roll it in a ball and place on the cookie sheet.
ROLL THE COOKIE MIX IN YOUR HAND
I was able to put 5-6 cookies on 1 cookie sheet. Place cookies in the oven and bake for about 15-18 minutes. Cool and prepare the next batch of cookies for the oven. This recipe will make 12-15 cookies depending on the size you make them.
Now that your cookies are ready, go ahead and prepare your icing. I tried to make this as simple as possible. Keep in mind you can use your favorite icing recipe for this cookie as well. The icing recipe I came up with was to make sure the icing was not too sweet and light.
Light, fluffy and quick Buttercream Icing
I used 1 can of store-bought buttercream icing, mixed with about 6 ounces of cool whip. Make sure you stir both ingredients together well.
Now, I did not use all the fancy decorating equipment to pipe this icing on the cookies. I simply used a sandwich bag, closed the bag, added the icing and clipped off the corner of the storage bag and piped a circle on the cookie or any other design you like.
Once the icing is on the cookie go ahead and add sprinkles to your cookies. Ta-Dah, you did it. Cookies are ready to serve.

Funfetti Chewy Sugar Cookie Ingredients
Light, Fluffy Buttercream Icing

- Set your oven to 325
- Prepare your cookie sheet
- In a Large bowl, melt your butter then add the vegetable oil
- Next in the bowl, add your eggs, milk, vanilla
- Add your flour, sugar, salt and baking soda
- Next add your instant pudding for moistness
- Mix with your mixer. Cookie Mix will be crumbly
- Take your hand and knead the cookie mix together
- Once mixed well together, add your sprinkles (you can add a little or a lot. It’s totally up to you.
- Take about 1/4 cup of cookie mix and roll in a ball, repeat and place the cookies on the cookie sheet.
- Bake for 15-18 minutes or until done.
- Once the cookies are cooled go ahead and ice the cookies as desired.
- In the mean time, get another bowl
- Empty the tub of buttercream icing in the bowl(be mindful, you can use another flavor if you like). Stir
- Add the cool whip and stir together.
- Place the icing in a ziploc bag and wait for the cookies to finish cooking and cooling
