Easy Chocolate Chip Pumpkin Cookie Recipe

This is a simple yet classic cookie recipe you can make using only need 3 ingredients.

Since I’m on this pumpkin kick. I was looking to do a mash-up, since it’s an abundance of pumpkin-flavored desserts this fall season. To share this cookie knowledge I’m going to share this easy chocolate chip pumpkin cookie recipe with you. It’s amazing y’all.

I wanted to mix the all-time favorite cookie of all time, the Chocolate chip cookie with a flavor from the fall season. PUMPKIN. So, I was in the grocery store and long behold look what I found:

I bought the log of chocolate chip cookie mix and the 12 big cookies individual pumpkin pie cookie pack. I also bought additional chocolate Hershey’s chocolate.

So, if you want to give these a try, I will also show you how to make these delicious double-stuffed cookies step by step.

First, take the pumpkin cookie and flatten it with your hands and put 1-2 pieces of chocolate in the center.

Next, cover the chocolate pieces with the pumpkin cookies

Now, you would want to cut your chocolate chip cookie dough about 1 inch in size. It may be a little crumbly, go ahead and roll it in a ball first.  Flatten it with your hand, but not too much. Begin to wrap the chocolate chip cookie around the pumpkin cookie, until very little pumpkin cookie is showing.

Stuffed Pumpkin Cookie

You will need to bake these cookies longer than normal because they are super thick and will bake super wide. So, make sure you do not overcrowd the cookie sheet. I wouldn’t put more than 5 on one cookie sheet.

This recipe will make 12 huge cookies. Bake for 15-18 minutes or until the edges of the cookies are brown. This cookie will stay moist for days, keep in an air-tight container
