The holidays are fast approaching us. What’s more holiday-ish than eating soft gingerbread cookies? This recipe is not your average gingerbread cookie recipe. Why? It has added chocolate and caramel to the batter. You will be the center of attention when you take these cookies to a party. I used the gingerbread box cake mix from the store, but as always, I mixed it up. I could use the box instructions as directed on the box because I didn’t want a flat cookie and I wanted to add more butter and a chewy cookie. This is how the chewy gingerbread cookie was developed. Follow this recipe so you too can make this delicious recipe.

You will need:

Betty Crocker gingerbread cake mix

Ghirardelli caramel chocolate squares 

Butter

Eggs

Milk

Ground Ginger, flour, baking powder

Pecans

Set your oven to 350

In a large bowl, add 1 stick of softened butter, and the milk. Mix your egg

Now add your cake mix to the butter mixture, and add the flour, ginger, and baking powder

The batter is sooooo good, the baked cookie is even better

There are a few more steps before putting the cookies into the oven

You want to add your chopped pecans and caramel chocolate.

Make sure when you add your pecans and caramel chocolate pieces that you do not over-stir. Remember the chocolate has caramel in it, so you want to avoid over-mixing.

Line your cookie sheet and add 2 tablespoons of cookie mixture to the pan.

Gingerbread cookie batter

Bake for 15-18 minutes or until done.

This recipe will make about 24 cookies

  1. Set your oven to 350
  2. In a large bowl, melt the butter
  3. Add your egg, tablespoon of milk
  4. Next, add all your dry spices, and mix well
  5. Then fold in the chopped pecans
  6. Chop the chocolates and fold them into the batter
  7. Bake cookies on 350 for 12-15 minutes or until done.
